Spicy Chicken Tacos

I love finding a good seasoning. My brother makes spicy chicken burritos with the Weber Kickin' Chicken Seasoning and I kid you not it is so yummy. And it's so good on every meat just for an extra kick.

Diced Raw Chicken
T. Green Chiles
Weber Kickin' Chicken Seasoning
1 tsp. Taco Seasoning

Toss all the chicken in frying pan. Sprinkle Kickin' Chicken seasoning all over. Mmmm mm. Add Chiles and taco seasoning. Cook thoroughly!
I used crunchy taco shells since I already had them but I think they would be better as soft tacos. Throw all your favorite toppings and voila! Delish!

Blueberry oatmeal pancakes.

Every time I make a pot of oatmeal I almost always have at least one cup full left, so when I came across this recipe I thought "perfect" now I can make a whole other breakfast with my leftovers!
In the food processor I add:
3/4 cup dry oats
1 cup all-purpose flour

2 tablespoons sugar

2 teaspoon baking powder

3/4 teaspoon Kosher or coarse salt

Put on high and try to get the oats as fine as possible.

In a seperate bowl I mix:
1 cup of cooked oats
3 tablespoons butter, melted and cooled slightly

1 1/4 cups whole milk

1 Tablespoon honey

2 large eggs
1 Tb cinnamon
2 handfuls of blueberries

Combine the dry ingredients with the moist and give it a few whirls then pour batter onto a hot oiled griddle, cook until brown and flip then brown on the other side.
I like to serve mine with walnuts and maple syrup.
Enjoy;)

Creamy chicken noodle.

This is seriously so easy!
When I've had a long day out and about I enjoy just whipping this up and serving it with some saltines.
Ingredients:
1 large can of chicken noodle
1 regular can of cream of chicken
1 regular can of milk (I use the cream of chicken can.)
1 tsp. chicken bouillon
S&P to taste
Whisk and heat thoroughly.
Enjoy!

Lasagna

I have been making homemade Lasagna since I was 12 and this is seriously the best recipe!

What you need:
An electric skillet - heat on high
Ground beef, a pound
A packet of dry spaghetti seasoning
A container of cottage cheese
Dry lasagna noodles
2 T Dry Basil
2 T Dry Parsley
Two cans diced tomatoes
2 cans tomato sauce
1 tomato sauce can of water
Lots and lots of sliced mozarella cheese to top it off!

Brown meat in skillet, drain. Sprinkle spaghetti pack over meat, evenly spread cottage cheese. Layer two rows of the dry noodles, (you can cook them if you want, it's probably faster). Sprinkle on your basil and parsley, then add your tomatoes and sauce. If your cook your noodles, don't add water. Line on top your mozarella cheese and simmer for an hour or so. Just check on it after a half hour. :)
You can also bake it, I have never tried it that way but my friend did it after I gave her the recipe and she loved it!
And it's the best for left overs!
Enjoy :)

Basil pesto

James and I have never been fan's of pesto but I think it's because we've only had jarred junk.
I had some fresh basil on hand and thought I would give this recipe a whirl, I'm so glad I did because now we're pesto fans!
I got this recipe off just cook already.
(My computer is being weird and isn't letting me add links.)
Fresh Basil Pesto
2 1/2 - 3 C basil leaves, gently packed
3/4 C fresh Parmesan cheese (use grated)
3 garlic cloves, minced
1/3 C pinenuts, toasted
1/2-3/4C extra virgin olive oil
kosher salt
a few cracks pepper

Place everything but olive oil in a food processor. (For the salt, start with 1/4 t and add the rest at the end. The final amount really depends on the saltiness of your cheese, so give it a taste first.) Give it a few pulses until things are chopped up.

Slowly pour in olive oil while processor is running* until you reach the consistency you want.

Boil a couple handfuls of spaghetti.

Balsamic Cherry Tomatoes
1 pkg cherry tomatoes
1/4 c balsamic vinegar
1/4 c olive oil
kosher salt

combine balsamic vinegar and oil in a bowl.
marinate cherry tomatoes in mixture for at least 1/2 hr.
Place on foil lined cookie sheet and broil for 10 minutes then add some kosher salt and you're ready for a treat.

Scookie

The scookie:
whisk together in a med. sized bowl:
1 cup flour
1/4tsp. salt
1-1/2 tsp. baking powder
set aside.
In mixer add:
1 stick butter
1 cup light brown sugar
1tsp. salt
1tsp. vanilla
1 egg
Mix for 1 minute on med. speed and turn to low and add the flour mixture.
Then add 1 bag chocolate chips.
Scrape batter in a greased 9" round pan and bake 0n 350 for about 20 min.
So perfect with vanilla ice cream!

Lemonade

After much begging, I let the kid's have a lemonade/cookie stand on Saturday.
I really wasn't very hopeful but tried to remain optimistic, well my optimism paid off!
They made 20 bucks, what a killing and the lemonade was pretty decent considering it wasn't fresh.
Here's the recipe.
Lemonade:
2 pkgs. koolaide lemonade
2-1/2 cups sugar
4 quarts water
1 cup lemon juice, this gave it the right amount of kick.
Give it a good stir and
Enjoy ;)

Soda Cracker Chicken

Yum YUM! I love dinners that take so little time and taste so delectable. I'm sure everyone has had this dinner but here's how I made it the other day :]

4 Chicken Breasts (depending on how many mouths you're feeding.)
1 Pack Soda Crackers
1/2 Pack of a Dry Ranch packet
1/2 T. Garlic Salt
S & P to taste
1/2 Cube Melted Butter

Heat oven to 350. Melt butter in a bowl. Crush up the soda crackers in a bowl, add the ranch, garlic salt, and s&p. Take your chicken breast and dip it in the melted butter, smother it in your cracker mess and place on a pammed up cookie sheet. Bake for 35 minutes or so. (I always guess....) Chile Relleno Casserole

I am a huge fan of Chile Relleno. Every time were out for Mexican food I will always get it. Mmmmm. My mom made this casserole growing up which is where I got my love for this tasty dish. There isn't much too it and I am still trying to find a sauce for the top of it that I might think could be better but for now, this will do!

Here's what you need:

3 Cans whole green chiles (slice down the middle)
1 Can Evaporated Milk
1 Small block of grated Jack Cheese (or Cheddar)
3 Beaten Eggs
1 Tsp. Flour
Salt and Pepper

1 Jar of Pasta Sauce (Prego)
1 Jar of Pace Picante Salsa

Preheat oven to 350. Lay chiles on bottom of 13x9 pan. Combine Milk, Eggs, Cheese, and flour and pour over top of chiles. (Sometimes I add another can of diced green Chiles in the batter). Bake for 30 minutes. Once the time is up, combine Pasta Sauce and Salsa in bowl, use just HALF of each jar. It can be too saucy. Pour on top of dish and bake for another 15-20 minutes.

The Baguettewich

You know how I love Fresh and Easy? Maybe cause it's amazing and you can get everything there. We swim at a girls house I work with every day and today her awesome husband made us Sandwiches. He said he got all the stuff to Fresh and Easy so off I went right after work! They were so yummy I had to come home and make it for dinner!! What you need:

1 French Baguette
Butter
Italian Seasoning
1 Sliced Yellow Onion
Deli Honey Ham
Deli Smoked Turkey
Your favorite Cheese
Light Mayo
Toppings of your choice: Avacado, Tomato, Lettuce, etc.

First: Caramelize your Onion in Lots O' butter.
Second: Cut your baguette right in half
Third: Spread lightly with butter and add a few sprinkles of Italian Seasonings (I just used what I have in my spice rack).
Toast that sucker on Broil.
Fourth: Top on your meats and cheese. Take away your top half of the baguette and toast just the bottom half until the cheese is all melty and delicious.
Fifth: Toss on your caramelized onions. Mmm mmm mmm.
Add some light Mayo (If you prefer, I do :]) and add whichever other fill ins you like.
Devour and Enjoy!!
Bon Appetit!

Creamy Chicken Enchiladas {E}

My dear sweet step mother introduced this delicious recipe once she and dad started dating and I crave them every week! It's such an EASY {E} recipe and you can always pop it in the freezer!
I changed it up a little just so it's not as fattening, even though fattening is better, but I just am trying to keep somewhat of my figure.

1 Rotisserie Chicken (Just the plain ol' roasted one will be best I'm sure)
White/Yellow corn tortillas
1 Large can Cream of Chicken soup
1/2 Carton of sour cream
1 small can green chiles
1/4 C Milk
Shredded Cheese (I use colby jack)

Preheat oven to 350. In a large bowl mix together soup, sour cream, milk and chiles. Get out a 8x8 or 9x13 (however many you want to make). Shred the chicken, warm the tortillas, stuff the tortilla with chicken, cheese, and a little of the sauce and roll. Continue until pan is full and smother generously the rest of the sauce all over rolled enchiladas. Top with cheese. Bake for about 25 minutes or until nice and bubbly. Enjoy with a little El Pato on top! Scrumptious!
