Lasagna

I have been making homemade Lasagna since I was 12 and this is seriously the best recipe!

What you need:
An electric skillet - heat on high
Ground beef, a pound
A packet of dry spaghetti seasoning
A container of cottage cheese
Dry lasagna noodles
2 T Dry Basil
2 T Dry Parsley
Two cans diced tomatoes
2 cans tomato sauce
1 tomato sauce can of water
Lots and lots of sliced mozarella cheese to top it off!

Brown meat in skillet, drain. Sprinkle spaghetti pack over meat, evenly spread cottage cheese. Layer two rows of the dry noodles, (you can cook them if you want, it's probably faster). Sprinkle on your basil and parsley, then add your tomatoes and sauce. If your cook your noodles, don't add water. Line on top your mozarella cheese and simmer for an hour or so. Just check on it after a half hour. :)
You can also bake it, I have never tried it that way but my friend did it after I gave her the recipe and she loved it!
And it's the best for left overs!

Basil pesto


James and I have never been fan's of pesto but I think it's because we've only had jarred junk.
I had some fresh basil on hand and thought I would give this recipe a whirl, I'm so glad I did because now we're pesto fans!
I got this recipe off just cook already.
(My computer is being weird and isn't letting me add links.)
Fresh Basil Pesto
2 1/2 - 3 C basil leaves, gently packed
3/4 C fresh Parmesan cheese (use grated)
3 garlic cloves, minced
1/3 C pinenuts, toasted
1/2-3/4C extra virgin olive oil
kosher salt
a few cracks pepper

Place everything but olive oil in a food processor. (For the salt, start with 1/4 t and add the rest at the end. The final amount really depends on the saltiness of your cheese, so give it a taste first.) Give it a few pulses until things are chopped up.

Slowly pour in olive oil while processor is running* until you reach the consistency you want.

Boil a couple handfuls of spaghetti.

Balsamic Cherry Tomatoes
1 pkg cherry tomatoes
1/4 c balsamic vinegar
1/4 c olive oil
kosher salt

combine balsamic vinegar and oil in a bowl.
marinate cherry tomatoes in mixture for at least 1/2 hr.
Place on foil lined cookie sheet and broil for 10 minutes then add some kosher salt and you're ready for a treat.

Scookie


The scookie:
whisk together in a med. sized bowl:
1 cup flour
1/4tsp. salt
1-1/2 tsp. baking powder
set aside.
In mixer add:
1 stick butter
1 cup light brown sugar
1tsp. salt
1tsp. vanilla
1 egg
Mix for 1 minute on med. speed and turn to low and add the flour mixture.
Then add 1 bag chocolate chips.
Scrape batter in a greased 9" round pan and bake 0n 350 for about 20 min.
So perfect with vanilla ice cream!

Lemonade


After much begging, I let the kid's have a lemonade/cookie stand on Saturday.
I really wasn't very hopeful but tried to remain optimistic, well my optimism paid off!
They made 20 bucks, what a killing and the lemonade was pretty decent considering it wasn't fresh.
Here's the recipe.
Lemonade:
2 pkgs. koolaide lemonade
2-1/2 cups sugar
4 quarts water
1 cup lemon juice, this gave it the right amount of kick.
