Corn muffins
I made some beans last night that i wasn't totally crazy about, but I made these amazing corn muffins with the beans and YES I was very happy with them!
1 cup corn meal
1 cup flour
1 cup sugar
1tsp. salt
1Tb. baking powder
4 eggs
can cream of corn
can diced green chilies
1 cup of butter
1 cup of cheddar cheese
Mix all together and bake on 400 for 30-40 min.
The recipe also came with this maple butter, which I haven't tried but sounds great
Maple butter:
2 sticks butter soften
1 cup maple syrup
1tsp salt
Whip butter and salt and slowly add the syrup.

Taco salad
Okay so my pictures aren't nearly as good as Amber's, but you get the idea.
This recipe is so simple and perfect for summer!
Enjoy
1 Lb. ground taco meat
3 chopped green onions
small can of sliced black olives
1 head of iceberg lettuce broken up
2 large handfulls of cheddar cheese
Low fat Catalina dressing to taste
crunched up Doritos

The BEST Pork Green Chile

1 1/2 lbs. Cubed Pork Loin
1 1/2 T. Flour
1-2 Cloves of Garlic, Diced
1 Yellow Onion, Diced
1/2 tsp. Cumin
1/2 tsp. Oregano
3/4 tsp. Salt
1/4 tsp. Pepper
1 Can Diced Green Chiles
1 Jar Ortega Taco Sauce (I used any brand of green taco sauce)
1 Jar Ortega Green Chile Salsa (")
1 Cup Water
1 tsp. Lemon Juice
Flour and brown meat thoroughly with onions, garlic, and seasonings. Add chile and sauces, water, and lemon juice in crock pot and cook on low for two hours.
*I will cheat and just throw everything in the crockpot without browning and it is just as delicious! Enjoy, trust me this is the best green chile!

Soda Cracker Chicken
Yum YUM! I love dinners that take so little time and taste so delectable. I'm sure everyone has had this dinner but here's how I made it the other day :]
4 Chicken Breasts (depending on how many mouths you're feeding.)
1 Pack Soda Crackers
1/2 Pack of a Dry Ranch packet
1/2 T. Garlic Salt
S & P to taste
1/2 Cube Melted Butter
Heat oven to 350. Melt butter in a bowl. Crush up the soda crackers in a bowl, add the ranch, garlic salt, and s&p. Take your chicken breast and dip it in the melted butter, smother it in your cracker mess and place on a pammed up cookie sheet. Bake for 35 minutes or so. (I always guess....) Just keep an eye on it ;] Serve with some yummy salad, rice, or potatoes!
